I have worked very hard on this dough. Although the actual gingerbread bisquit that is made in Central Europe has the bitter taste of the ginger,I have changed the amounts of the spices used on this dough keeping the sharpness of the ginger but giving more sweetness from the cinnamon. There is a very nice balance on this flavour leaving a very fresh aftertaste.
